The verrines are created by Chef Christophe Bassard of the Restaurant "La Parenthèse" in Chille. For this season (fall/winter), we offer the following verrines: 1. Crémant du Jura – Pink trout Gravelax toast with seaweed butter and pickles. 2. Cuvée Flor – Toast Cod rillette, crab meat and Madras curry 3. Les Prémices - Toast Cheese cream with herbs and raw ham from Haut Doubs 4. Tradition - Morteau/Comté/Roasted Hazelnut Puff Pastry 5. Château-Chalon - Verrine of Bresse poultry parsley and whipped cream "mustard, curry, Vin Jaune" 6. Macvin du Jura - Praline choux pastry and caramelized hazelnuts 7.
